You see the signs all over every single grocery story.  Gluten free. For that matter, haven’t we all seen a fair number of such packaging in friends’ kitchens? Or our own? But what is gluten exactly?  The answer might surprise you. Gluten is a natural protein found in wheat and some related grains like barley and rye.  In truth within the grain it functions as more than simply a nutrient.  When baked, gluten gives breads a slightly chewy texture.
