Cajun Shrimp Tacos Recipe

INGREDIENTS
  • FOR CAJUN SHRIMP
  • 1 lb shrimp (deveined)
  • 1 tbsp butter
  • 2 tbsp cajun seasoning
  • juice from half a lemon
  • salt to taste (depending on how much your seasoning has)
  • FOR MANGO SALSA
  • 1 mango, chopped
  • 1 cup baby heirloom tomatoes, chopped
  • 4 green onions, chopped
  • 1 jalapeño, seeded and chopped
  • ½ cup cilantro, chopped
  • salt & pepper to taste
  • CILANTRO LIME CREMA
  • ½ cup sour cream
  • 1 tbsp lime juice
  • 2 tbsp cilantro, finely chopped
  • ½ tsp finely minced garlic
  • salt & pepper to taste
  • FOR TACOS
  • 8 6″ corn tortillas
  • shredded cabbage
INSTRUCTIONS
  1. FOR THE MANGO SALSA. Add all ingredients in a bowl and mix. Refrigerate until ready to serve.
  2. FOR THE CILANTRO LIME CREMA. Mix all ingredients in a bowl and refrigerate until ready to serve.
  3. FOR THE CAJUN SHRIMP. Marinate shrimp with cajun seasoning. Add salt to taste depending on how salty your seasoning is.
  4. Melt butter in a skillet and add the shrimp. Cook for a few minutes, until the shrimp is opaque and pink. Squeeze lemon juice over shrimp.
  5. TO ASSEMBLE TACOS. Warm tortillas. Add shrimp. Top with desired amount of shredded cabbage, mango salsa, and cilantro lime crema.
