Cool Poppy Seed Bread

  • ¼ cup unsalted butter, softened
  • ¾ cup sugar
  • 1 egg
  • 1 egg white
  • 1 tsp vanilla extract
  • 2 tsp grated lemon zest
  • ¾ cup sour cream
  • 1½ cups. all-purpose flour
  • 1 tsp baking powder
  • ¼ tsp baking soda
  • ⅛ tsp salt
  • 1½ tbs poppy seeds
  • ⅓ cup strawberry jam
  1. Preheat oven to 350. In the bowl of a stand mixer or any medium bowl, cream the butter and sugar until soft and creamy. Add the egg, egg white, vanilla extract, and lemon zest and mix until blended. In a separate bowl, combine the flour, baking powder, baking soda, salt, and poppy seeds. Add dry ingredients to the wet batter. Then gently fold in the sour cream.
  2. Spread half of the batter into a loaf pan. Then, gently spread the jam in the middle leaving some space to create a border at the edges. Top with remaining batter and spread evenly. Bake for 45-50 minutes or until a toothpick inserted in the center comes out clean.
