Mint Oreo Layered Casserole

Ingredients 1 package Mint oreos 1 c Milk 16 oz Cool whip 8 oz Cream cheese 1/2 c Confectioner’s sugar 1/4 tsp Mint extract 4 drops Green extract 1 box Chocolate pudding , large + Milk as required in instruction on the box Instructions Make pudding according to directions on the box. Put it in the refrigerator until it has set. Dunk each Oreo in milk and place it in the bottom of a casserole dish. Mix 1 container Cool Whip, cream cheese, confectioner’s sugar, mint extract, and food coloring, together until smooth. Spread mixture over the cookies. Spread pudding over the cream cheese mixture layer. Top with a layer of Cool Whip and sprinkle the top with crushed mint Oreos. Put it in the refrigerator and let sit for at least 1 hour. Serve and enjoy!

Peanut Butter Banana Breakfast Rolls

Ingredients: Whole Grain Tortillas 1 Ripe Banana Peanut Butter Yogurt (optional) blueberries & other fruits (optional) granola (optional) Instructions: You start with a little peanut butter spread on a whole wheat wrap and a sliced up a banana. Then you can add just about anything you like so they never get boring.Fresh strawberries, blueberries, yogurt, and granola is my favorite combination. Roll it up and breakfast is served.

Chicken Avocado Salad

Ingredients Chicken Salad 4 oz. Grilled or Baked chicken, cubed 3 Cherry tomatoes, sliced ½ Avocado, cubed Salt to taste Lime Cilantro Vinaigrette 3 Tbsp Olive oil 2 Tbsp Lime Juice 1 Tbsp Red Wine Vinegar 1 Tbsp Cilantro Salt to taste Instructions Lime Cilantro Vinaigrette Whisk all ingredients together adding salt slowly until you reach the taste you like. Chicken Salad Combine the chicken and tomatoes and pour ½ of the vinaigrette over them. Mix together until well coated. Add avocado and the rest of the vinaigrette and toss gently so you don’t smash the avocado. Salt to taste. Eat as is or serve them in lettuce wraps.

Peanut Butter with a Twist

Honey Cinnamon Peanut Butter This will keep tightly covered in the fridge for weeks.  Although I doubt it will last that long! 1 c creamy peanut butter 3 T honey 1 1/2-2 tsp cinnamon Whisk all ingredients together. Peanut Butter W/Honey & Cocoa I wanted this to taste like peanut butter with chocolate in it, not chocolate with a bit of peanut butter.  This has just a hint of chocolate without being too sweet. 1 c creamy peanut butter 1/4 c honey 1 T cocoa powder a splash of hot water Whisk all ingredients together.  Add the splash of hot water if needed, as the cocoa can make it a bit dry.

Catsadillas

INGREDIENTS 1 large grain free or regular torilla cheddar cheese (use nondairy if needed or use avocado and beans like this recipe) 2 slices of cucumber, for the eyes 2 cucumber slices, for the cheeks 2 carrot triangles, for the ears tip of a baby carrot, for the nose 1 carrot + mini red pepper, peeled, for the stripes tip of mini red bell pepper, for the mouth INSTRUCTIONS Cook the tortilla on medium high heat (use a little nondairy butter to brown it up nicely if you want). Froggy Sandwiches

INGREDIENTS 2 slices gluten free bread 2 slices cucumber, for the eyes 2 blueberries, for the eyes 1 cucumber sliced in half, for the feet Lettuce for the lily pads INSTRUCTIONS Create whatever sandwich your little one loves the most between 2 slices of gluten free bread. Using the rest of the ingredients, make your froggy face. Don’t forget the lettuce lily pads!
