Raspberry Mango Margaritas

Ingredients: For the Raspberry Margaritas: 1 1/2 cups frozen raspberries 1/3 cup fresh lime juice 3/4 cup tequila 1/4 cup chambord (or another raspberry liqueur) 1 tablespoon confectioners’ sugar (optional, for a sweeter drink) 2 cups ice (hearty cups!) Tropical White Wine Sangria

Ingredients: 1 bottle sweet white wine (I used Barefoot Sweet White Spritzer) 1 c. Malibu rum 6 oz. (3/4 c. or 1 small can) pineapple juice ½ c. orange juice *Fresh pineapple, oranges, strawberries, and kiwi, sliced   Instructions: Combine all ingredients in a large pitcher and chill until ready to serve. *The more fruit, the better!

Spicy Jalapeno Grapefruit Margarita

Ingredients: 1 1/2 cups (350ml) tequila 2 cups (500ml) grapefruit juice 3/4 cups (180ml) fresh lime juice 4 tablespoons honey 1-2 whole jalapeños, sliced Lime and grapefruit slices, for garnish Granulated sugar and fresh cracked pepper, for rimming the glasses Instructions: In a shallow plate, combine sugar and pepper. You’ll use this mixture to rim the glasses. Combine all the ingredients in a pitcher and stir well to combine. Keep refrigerated for 30 minutes to 2 hours, checking spiciness from time to time. Pineapple Mojito Sangria

Ingredients: 3 medium limes, thinly sliced Small bunch peppermint, leaves stripped (about 30 peppermint leaves) 1/3 cup granulated sugar 1 small fresh pineapple, peeled, cored, and cut into 1 to 2-inch chunks (about 2 cups diced) 750 ml bottle white wine (on the dryer side is best – I like Sauvignon Blanc or Pinot Grigio) 1/2 cup white rum 3/4 cup pineapple juice 4 cups lemon lime soda Additional peppermint leaves and pineapple wedges for garnish Instructions: In a heavy pitcher, muddle together the lime slices, peppermint leaves, and sugar. New Years Eve Punch

Ingredients: 2 bottles of Champagne (or another sparkling wine) 1 750 ml bottle of Ruby Port 2 cups fresh grapefruit juice ½ cup simple syrup (1:1 ratio) Grapefruit slices for garnish Instructions: Place all ingredients in a large punch bowl filled with ice. Large ice works best here, so that the punch is able to hold without diluting too fast (if you don’t have large ice molds, you could freeze large blocks of ice in Tupperware containers). Garnish with fresh grapefruit slices.

Cranberry Pineapple Punch

Ingredients:  4 cups cranberry juice 4 cups pineapple juice 1 cup silver rum 1 cup coconut rum 2 liter ginger ale juice of 1-2 limes Garnish 2 limes, sliced (plus more for glasses) 1 cup fresh cranberries, frozen  Instructions: combine cranberry juice, pineapple juice, silver and coconut rum, and lime juice in a pitcher add lime slices and fresh cranberries to the pitcher top off with ginger ale or just add directly to glass when serving enjoy!  

Pineapple Blackberry Mojito

Ingredients: 8 blackberries 1/2 cup fresh pineapple, diced 10 fresh mint leaves 1 tablespoon simple syrup 2 tablespoons fresh lime juice 1/2 cup white rum 1/2 cup sparkling water lime wedges, mint, pineapple, blackberries, optional (for garnish) Instructions:  Divide blackberries, pineapple, and mint between two glasses. Use the end of a wooden spoon to mash everything together. Put half the simple syrup, lime juice, and rum in each glass. Stir to combine. Add ice and sparkling water. Garnish as desired. Serve immediately.

Blood Orange Gin Cocktail

Ingredients: 1 oz gin 3/4 oz St. Germain (elderflower liqueur) 1/2 oz lime juice 2 1/2 oz ginger ale 1 oz blood orange juice Instructions: In a serving glass, combine gin, St. Germain, lime juice, and ginger ale. Top glass with ice. Slowly pour in blood orange juice. Garnish with blood orange slices and fresh lemon thyme sprigs, if desired. Serve immediately.

Fizzy Spiked Pear Punch

Ingredients: 4 cups pear juice 1 bottle prosecco or champagne 3/4 cup vanilla vodka 1/2 cup simple syrup Fresh pears for garnish Instructions: Pour pear juice, vodka and simple syrup into a pitcher and stir to combine. Pop a bottle of bubbly and slowly pour the full bottle into the juice mixture in your pitcher. Stir again, gently. Fill glasses to the top with ice and serve up your pear punch! Garnish with slices of pear. (Tip: I ran my pears through my mandolin to get those cool pear-shaped slices of fruit.) Adjust the sweetness by adding more or less simple syrup, or skip it entirely!  

Sparkling Apple Cider Sangria

Ingredients: Serves 8 2 apples, peeled, cored and thinly sliced 1/2 cup cognac 2 cups apple cider 750ml bottle cava (or other dry sparkling wine), chilled 1/4 cup pomegranate seeds Instructions: Add the apples to a large pitcher reserving about 1/2 cup for garnishing. Add the cognac, apple cider, and chilled cava. Stir. Fill the pitcher with ice. Pour the sangria into glasses filled with ice and top with sliced apple and pomegranate seeds.
