INGREDIENTS 1/3 cup butter, melted 1 cup brown sugar 1 egg 2 teaspoons vanilla 3 ripe bananas, mashed 1/2 cup pecans, chopped 1 cup flour 1/2 teaspoon baking powder 1/8 teaspoon baking soda 1/2 teaspoon salt 1 teaspoon cinnamon 1/2 teaspoon nutmeg Frosting 1/2 cup butter, softened 2 cups powdered sugar 1/3 cup maple syrup 1/2 teaspoon vanilla 1/4 cup pecans, chopped INSTRUCTIONS 1. Birthday Oreo Truffles

INGREDIENTS 1 (16 oz) package of Birthday Cake Oreo cookies, divided 1 (8 oz) package of cream cheese, softened 1 package of almond bark (or baking chocolate, whatever you prefer), melted Rainbow Ball Sprinkles INSTRUCTIONS Crush 20 cookies to fine crumbs in a plastic bag or in a food processor. Place in medium bowl. Add cream cheese and mix until well blended. Roll cookie mixture into about 1-inch balls. Put balls in fridge for 30 minutes to an hour. Dip balls in chocolate; place on wax paper-covered baking sheet. (Any leftover chocolate can be stored at room temperature for another use.) Sprinkle with reserved cookie crumbs. Refrigerate until firm, about 1 hour. Store leftover truffles, covered, in refrigerator.

Pineapple Lime Jello Salad

INGREDIENTS 8 oz container of low fat Cool Whip 4 oz box of Lime Jello 12 oz container of fat free Cottage Cheese 21 oz can of tidbit pineapple, drained 2 Bananas, sliced INSTRUCTIONS 1. Put the cool whip and jello in a large mixing bowl and whisk until they are well blended and most of the jello dissolves into the cool whip. Next fold in the cottage cheese, pineapple and bananas. Stick into the refrigerator until you are ready to eat!

Oatmeal Coconut Dream Cookies

INGREDIENTS 1 large egg 1/2 cup margarine or butter 3/4 cup brown sugar 1/3 cup cane sugar 2 Tablespoons vanilla extract 1 cup flour 1 cup Old Fashion Oats 1/2 teaspoon salt 1/2 teaspoon baking soda 3/4 cup shredded coconut, sweetened 1/2 cup chopped walnuts 1 1/2 cups milk chocolate chip INSTRUCTIONS Preheat oven to 350 degrees. In a large bowl, combine egg, and softened margarine. Mix in the sugars and vanilla. Continue mixing and add flour, old fashioned oats, salt, baking soda, coconut walnuts, and chocolate chips. Scoop into small bowls and place on cookie sheet. Bake for 8-10 minutes or until the edges are golden.
